Cured salmon tartare with rye crumble and pickled red onions

Lamb shank baked for 14 hours, potato purée, grilled baby carrots and sauce made from the bouillon

Creme Brulée with candied nuts and homemade sorbet
MONDAY
Carpaccio with toasted cauliflower, capers, parsnip chips and a rocket and parmesan salad
Pan seared salmon with cabbage and fennel salad, lobster sauce and roast potatoes
Gateau Marcel with salted caramel and berry gel
TUESDAY
Creamy shrimp salad with toasted focaccia, grilled lemon and dill oil
Beef tenderloin tournedos, pumpkin purée, soya bean and amandine potatoes served with a truffle jus
Berry parfait with pistachio and red berry coulis
WEDNESDAY
Lobster roll served with fresh spring onions chili mayonnaise and fried onion
Crispy pork belly with Jerusalem artichoke purée and chips, salt-baked beets and red wine sauce
